Coming In Hot - Pineapple Fritters w/ White Sauce & Pineapple Slaw

This should be a video blog series but I just can't get the RV where I want it to have you in my place and I left half my supplies at B's Marina & Campground in the Tiki Bar so I don't want you to laugh at my Dollar General supplies.

I am just outside Tallahassee on Highway 98 and NOTHING is nearby.

I created two really awesome dishes at the Tiki Bar and I wanted to share those with you.

One is great-ish for you and one is just GREAT, Period.

My Pineapple Fritters are a little special to me. It was a joint effort to perfect these things and I am not real sure of all the exact measurements but thanks to Dolly Parton in Steal Magnolias (cup a' Cup a' Cup a') we will get through it. I use a small sauce pan for my fryer so that they are small funnel cake looking things. 

PINEAPPLE FRITTERS WITH WHITE SAUCE


1 CAN CRUSHED PINEAPPLE
1 CAN CHUNK PINEAPPLE
ALL PURPOSE FLOUR
CINNAMON
SWEET SHREDDED COCONUT
OIL FOR FRYING
I BLOCK OF CREAM CHEESE
CONFECTIONERS SUGAR
Regular Sugar too

First you wanna get your oil hot and just make sure it's not too hot but yet hot enough to deepfry them. As your heating your oil you can drop a small amount of your fritter badder and test the oil. Like popping stove top popcorn. The fritter dough will drop to the bottom and start to rise. You will need to turn your fritters to cook both sides. If you don't want a larger funnel cake type fritter then just drop spoonfuls. 

Open your cans of Pineapples and drain the juice and SAVE IT from both cans. 

Put all your crushed pineapple in a mixing bowl using the can from your pineapple fill it with all purpose flour and dump it in the mixing bowl and mix add back some of the juice to make the mixer tacky.  You know if you were to grab it in your hand you couldn't get if off with out washing your hands or a spatula.

Fill your can 3/4 with flour and then top the can off with regular sugar. Dump that in your mixture and also your pineapple chunks. Add half a teaspoon of cinnamon and mix well. add pineapple juice to get it tacky again. 

In another mixing bowl take a soft block of cream cheese and confectioners sugar add pineapple juice as you mix or whip.  you will want this mixture to be thick but liquid enough to pour like the consistency of mayo I guess. Set that back in the frige.

If you use the droping method, roll your tacky spoonfuls of dough in the coconut and fry. It's harder to do using the funnel cake method. 

Using a Freezer Bag with the corner cut out or a pastry bag or cake decorating bag start drizzling the fritter batter in the oil. The fritter will be a dark brown flip it and cook the other side.

When its done. Put it on a plate and dust with confectioners sugar and then cover with the cream cheese sauce and CHOW! 


PINEAPPLE COLE SLAW

1 BAG OF COLESLAW MIX
1 BAG OF BROCCOLI  SLAW MIX
CELERY SALT
Southern Cole Slaw Dressing
WHITE Pepper
1 Can Crushed Pineapple

Put both bags of slaw mixes in a bowl and mix

Use Two Teaspoons of Celery Salt and Mix

Ad one to two dashes of Olde Virden's Red Hot & White Pepper

Ad your Pineapple and Toss as you ad the coleslaw dressing and JUST BARELY COAT with dressing. 

LEt it set - careful the Olde Virden's will get hotter as it sets longer so start with one dash. 

Letting it sit over night is the best. 

Use it on Fish Tacos, Lettuce Shell Tacos and Sausage Dogs or with your favorite burger or sandwich.
